My weekly meal plan was made later than usual. Everyone is going to have to adjust to a new schedule around here this week. It isn’t going to be easy, but I’m hopeful that in the long run it will be worth it. Money this month has been so tight that I’ve had to be creative. Luckily we have some freezer meals and a full stocked pantry to use.
Monday- It’s normally our family pizza and movie night, but we are moving it to Tuesday this week. Instead we will be having lemon pepper chicken with rice. A yummy dish that the boyfriend’s mom used to make. We can use up a bunch of drumsticks that we bought on sale a while ago.
Tuesday- Pizza and GAME night!
Wednesday- Breakfast for dinner. Super simple and cheap, and a favorite!
Thursday- Swiss cheese chicken casserole (already in the freezer)
Friday- Per request of the little, nachos!
Sunday- spaghetti and meatballs (meatballs are already home made and frozen)
Breakfasts for the week are green smoothies, cereal, blueberry pancakes, or eggs. I generally make a big batch of pancakes and freeze them.
Desserts are fresh fruit, jello, yogurt, or sorbet.
We go back to school on Thursday, so I am thinking of making even more freezer meals. A few of the recipes I tried last week that could be freezer meals were hit or miss, so the hunt continues for easy, delicious, healthy food.
