Weekly Meal Plan #22

Happy Sunday night! Actually, Sunday night for me is the least happiest of nights since I am headed back to work tomorrow. And even though I like my job, I like staying home with my family even more! Anyway, today the boyfriend and I mapped out what we were going to have for dinners pretty much all week. Little Lo gets hot lunch everyday at school, so that is easy enough. Breakfasts generally consist of smoothies or hard boiled eggs or cereal. Something easy. I want to healthy up things a bit more as we head into the next month, so I am slowly pinning recipes that I can do batch cooking with, which will be easy to grab and go.

MealPlan SundaY

On Friday, we all had a day off from school. Logan stood at his dad’s and the boyfriend and I went out to check out a new place that sells basically just meat. We used a big portion of our budget, but for $109 we bought all of this meat! It broke down to ten pounds of ground meat, 10 pounds of boneless skinless chicken, four packages of sausage, 1 pound of bacon, 1 package of family size steaks, and 1 pork loin cut whatever way you want. (We got pork chops). We portioned everything into our small family sized freezer bags and we literally will have enough meat to last us months! It is definitely something that I would do again! I priced out our regular meat budget and this saves us loads of money! I have honestly never been so excited about shopping for meat before! It just feels good to know that while I have been struggling financially, we don’t have to worry about our next meal. And since we cook at home every night, our grocery list will be considerably less this month.

Anyway, enough about meat…… Here is what we are planning for dinners this week, all week!

Sunday: Breakfast for dinner! Blueberry pancakes, eggs, bacon….. easy yumminess! The extra pancakes will be frozen for quick breakfast for my pancake loving kiddo.

Monday: Pizza night. Left over bacon will be for sure used on some of it.

Tuesday: Stuffed burgers with salad or fries… or both.

Wednesday: New recipe: Hawaiian pork chops in the slow cooker with brown rice.

Thursday: Saint Patty’s Day! Corned beef, mashed potatoes, cabbage and carrots

Friday: Since we didn’t get to them last week: Chicken fajitas! My favorite. I’m making mine into a giant salad!

Saturday: Leftovers galore! Use them up in our night time bed prty! Basically we pile into bed watch movie and eat whatever leftovers we want!
