Happy Valentine’s Day, my dear friends! Today I’m off to celebrate with my closest loved ones. My little family and I have some fun planned. And I’m spoiling the fur babies with extra treats all around! Here is what we will be eating this week! Hope you enjoy today, and remember to show yourself some extra sweetness too!
Sunday: Valentine’s Day!!!! Growing up, we always had spaghetti and meatballs by candle light for Valentine’s day. I am kinda continuing the tradition. Except we are making lasagna because I need to use up my ricotta. But there will be candles! And a super delish cheesecake for dessert! I base the recipe a bit off of Money Saving Mom’s Raspberry Cheesecake Pie. I have made her version and it is creamy and full of dessert-y goodness. Check it out here:

Monday: Pizza Monday. I make the herbed pizza dough in my bread machine. I use leftover meat and veggies for toppings. Lo always wants cheese so it is half cheese. So easy. So cheap. So yummy!
Tuesday: Salsa chicken. Or as I call it, the easiest most crowd pleasing recipe ever!
Wednesday: I don’t usually do two of the same meats in a row, but this jalapeno popper chicken casserole is so different from the night before that I think I can get away with it!

Thursday: We have a special school event, so I am thinking we will probably eat something quick. I might pull out one of our frozen soups and have that for dinner. My current favorite is a copycat recipe of Panera’s tomato basil soup. Honestly, it is so so so good, you guys! And it warms up your whole body, which is perfect for February in New England!

Friday: I was actually thinking turkey burgers. These Greek burgers from Budget Bytes are going to be a new one. I heart Greek food, so I’m thinking at least I’ll like it! Logan may just eat the cucumbers…..

Saturday: LEFTOVERSSSSS
So that’s what’s in store for this week. I can’t stop thinking about the cheese cake.

We made it once before. The boyfriend and I loved it! The kiddo refused to try it because he was afraid of how spicy it would be. But it wasn’t overpoweringly spicy, and it was quite creamy and decadent! Pretty easy too! I recommend you give it a try! 🙂
